Ingredients for making cod fricasse with cream cheese and potatoes:

 ½ kilogram of salted cod flakes

 1 chopped onion

 2 chopped garlic cloves

 1 can of corn

 1 box of sour cream

 4 tablespoons of cream cheese

 2 tablespoons of olive oil

 1 package of grated cheese

 1 packet of straw potatoes

 black pepper to taste

 salt to taste

How to make cod fricassé with curd and potato:

Start by rinsing the cod, which must have been desalted since the day before - see how to prepare cod in the right way. Reserve.

Heat a frying pan with the oil and, when it is hot, add the chopped onion and garlic. Let it cook for 1-2 minutes, stirring occasionally, and add the cod. Mix and leave for 5 minutes, during which time the cod will release water and cook.

Meanwhile, beat the drained corn and the cream in a blender. If you prefer, you can substitute the cream for 1 cup of milk and 2 tablespoons of cornstarch or wheat flour.

Tip: Preheat the oven to 200ºC (high oven).

When the cod is dry, break it into smaller chips by pressing it with the spoon and place the cream from a blender.

Tip: Cod will fall apart easily if it's already cooked. If it's still hard, simmer for a few more minutes before adding the cream from the blender.

Mix the cod with the easy-to-mix corn cream and season to taste with salt and pepper. Mix and leave on fire, stirring occasionally, until thickened.

Tip: In this case I used a mix of peppers that includes black pepper, white pepper, pink pepper and allspice. You can add other spices of your choice, such as cumin and nutmeg.

After the previous step, transfer the creamy cod hashbrown to a baking sheet. Dip in a few spoonfuls of cream cheese and top with grated cheese (I used mozzarella).

Top with a layer of potato straw and place the cod hashbrowns in the oven at 200ºC for 10 minutes or until the cheese melts and the potatoes brown a little.
